Process: SENS COLA Co-ferment with Cherry, Orange and Cinnamon
The next release in our PEAK : Single Farm Micro-lot series comes to us again from Juan David Puerta of SENS Coffee in Quindio, Colombia. We met Juan David on a sourcing trip in November 2022 and he is the same flavor engineer who provided us the PEACH co-fermented coffee we released the past two summers.
We had the opportunity to visit SENS again in late 2024 and while there Juan introduced us to one of the more interesting co-fermented coffees we have experienced so far which has been dubbed “SENS COLA”
To achieve this profile, Juan introduces flavors directly from Cinnamon, Cherries and Oranges into the seeds through his Osmotic Dehydration process. The coffee is then patio finished before being milled, sorted and vacuum sealed for export directly to Kansas City.
On the nose the aromas resemble a freshly baked almond croissant while in the cup we get a coating layer of vanilla and amaretto from the cinnamon and cherries followed by a juicy and citric sweetness and acidity from the oranges. The resulting essence definitely resembles a Cherry Pop but the complexity is closer to a Strawberries & Cream Mr Pibb.
